Ingredients needed

  • Salmon.Use canned or fresh salmon. If you are using fresh, read just below how to cook it first.
  • Bread Crumbs.I think panko breadcrumbs are the best for this recipe. Or use crumbled saltine crackers.
  • Eggs.They help to hold the patties together.
  • Parmesan cheese.Or Pecorino.
  • Bell pepper.Use any color you like. Just remember that red bell pepper is sweeter than green pepper.
  • Mayonnaise.Use store-bought orhomemade mayo.
  • Mustard.Dijon mustard or your favorite kind.
  • Fresh herbs.Fresh dill, parsley, cilantro, or green onion.
  • Oil for frying.I use avocado oil but feel free to use any oil you typically use for frying, such as vegetable oil.

1. Place the salmon into a large bowl, and gently flake with a fork.

2. Add the rest of the ingredients and mix everything well.

3. Using a ½-cup as a measure, scoop the salmon mixture and form small patties with your hands. (You'll end up with 6 medium patties).

4.IF FRYING:Heat oil in a large skillet over medium heat (use enough oil to generously cover the bottom of the skillet). Fry the patties for about 5 minutes on each side, until crispy and cooked through.

IF BAKING: Just drizzle some olive oil onto a large, non-stick (or parchment paper covered) cookie sheet, making sure that the surface is evenly covered. Arrange the salmon patties on the sheet in a single layer and gently brush the tops with some oil. Bake at 425˚F for 15 minutes. Flip, and bake for an additional 5-7 minutes.

Fresh VS. Canned Salmon

You can makecanned salmon pattiesorfresh salmon patties. You'll need either one15 oz. canor about 1 lb. of fresh salmon.

I use Wild Caught Canned Salmon for this recipe. It is an easy, cheap, and healthy option. You may be surprised to find out that canned salmon is equally nutritious when compared to fresh salmon (Read more here). I recommend always choosing wild-caught salmon.

If you decide to use fresh salmon to make these salmon patties, you’ll need to bake it beforehand. Just drizzle it with some olive oil, season with salt and pepper, and bake in a preheated oven (425˚F) for about 15 minutes.

Recipe Variations

  • Add onion. You can add finely chopped red onion in addition to scallions.
  • Add different seasonings. Old bay seasoning, garlic powder, crab cake seasoning, and black pepper are great to add to this recipe.
  • Add heat. If you'd like to add a touch of heat to these delicious patties, add some red pepper flakes or hot sauce.
  • Switch breadcrumbs to almond flour. Use almond flour to adapt this recipe to your keto diet.
  • Add extra herbs. Fresh parsley, dill, or cilantro work well here.
  • Add lemon. Add a splash of lemon juice and about ½ tsp. of lemon zest for a hint of lemony flavor.

Can you freeze salmon patties?

Yes! Lay out the salmon patties on a baking sheet, side by side, and place in the freezer for 1-2 hours. Once the patties are just frozen, place them in a freezer bag and place back in the freezer.

Transfer the frozen salmon patties to the fridge the night before you plan to make them. Bake or fry, following the recipe steps.

How long to cook frozen salmon patties?

If you forgot to transfer the patties last night, that’s OK. It happens to me all the time. 🙂 The good news is that you can still enjoy these seafood treats today.

If you’d like to FRY frozen salmon patties,place them in a well-oiled, non-stick skillet, and fry on low heat for about 10 minutes with the lid on. Remove the lid, flip the patties, and cook for another 7-10 minutes, until fully cooked through and golden brown.

If you’d like to BAKE frozen salmon patties,place them on a large, well-oiled, non-stick cookie sheet and bake at 350˚F for about 30-35 minutes, flipping halfway through.
