This seafood lasagna is a nice option to our usual lasagna. It is an extremely delicious dish packed with scallops, shrimp, and crab in a creamy sauce. I am pretty sure your family will love this fabulous seafood lasagna as much as we do!

INGREDIENTS :

  • 2 tbsp plus 1/2 c. butter, divided
  • 1 green onion, finely chopped
  • 9 lasagna noodles, cooked and drained
  • 2 tbsp canola oil
  • 1 bottle (8 oz.) clam juice
  • 1/2 c. chicken broth
  • 1 lb bay scallops
  • 1/2 c. all-purpose flour
  • 1 package (8 oz.) imitation crab meat, chopped
  • 1 lb uncooked small shrimp, peeled and deveined
  • 1/4 tsp white pepper, divided
  • 1-1/2 c. 2% milk
  • 1/2 tsp salt
  • 1/2 c. shredded Parmesan cheese, divided
  • 1 c. heavy whipping cream

DIRECTIONS :

Step 1: In a large skillet, heat the oil and 2 tbsp butter. Add the onion and saute until tender. Then, stir in the broth and clam juice. Bring the mixture to a boil, then add the scallops along with the shrimp, crab, and 1/8 tsp pepper. Allow everything to come to a boil, then decrease the heat. Simmer while stirring gently for about 4 to 5 minutes, uncovered until the shrimp is pink and the scallops are opaque and firm. When done, drain, reserve the cooking liquid, and set the seafood mixture aside.

Step 2: Melt the rest of the butter in a large saucepan. Once melted, stir in the flour until smooth. Mix the milk with the reserved cooking liquid, then slowly add this to the pan. To taste, season with salt and the rest of the pepper. Bring everything to a boil. Cook for about 2 minutes until the sauce has thickened, stirring. Take the pan off the heat, then stir in the cream along with 1/4 cup of cheese.

Step 3: Into the seafood mixture, stir about 3/4 cup of the white sauce.

Step 4: Meanwhile, prepare the oven and preheat it to 350 degrees.

Step 5: In a greased 13 x 9-inch baking dish, spread a half cup of white sauce. Over the sauce place three noodles and spread half of the seafood mixture, then 1 1/4 cups sauce on top. Do the same layers for the rest of the noodles, sauce, and cheese.

Step 6: Place in the preheated oven and bake the lasagna for about 35 to 40 minutes, uncovered, until golden brown. Remove from the oven when done and allow the lasagna to sit for about 15 minutes before slicing. Enjoy!
